finishing up.

Hi loves! Below are some updates on my life! I hope you’re staying warm, cozy, and feeling the magic of the holiday season. XX, Mir

What I’ve been up to:
  • Went to Indy two weekends ago for my mom’s holiday work party, the Big Ten Championship game, and Christmas card pics!
  • Celebrated my love’s birthday with a sushi dinner and Brett Eldredge Christmas concert at The Chicago Theatre.
  • Found a hair salon and got my first haircut since I’ve moved. (Kind of a big deal since I’ve gone to the same stylist at home since I was 10!)
  • Went to the Christkindl market with a long-time friend. Christmas in the city is so fun!
  • Bought a tree, stockings, and candles to cozy up the downtown apartment.
  • Jim and I had brunch with my godmother and her husband last weekend. Never underestimate the goodness of a homemade snickerdoodle!
  • Saw Instant Family at the movie theater. I definitely recommend seeing it!
  • Listened to Brett Young’s new album Ticket to L.A. Check it out if you love country music and want to switch up your go-to playlist!

it’s all good.

Wow! This week was draining! Midterms on a quarter system are no joke. However, I finished my two most stressful ones and have two take-home ones to do this weekend. However, let’s not remind myself of that and fill y’all in on my weekend plans!

TODAY/TONIGHT:
  • run.
  • Target trip for Halloween costume props.
  • homework.
  • working at the café!

cauliflower pizza crust recipe!!

My toppings:
  • BBQ sauce
  • spinach
  • red bell peppers
  • pinch of cheese
Suggestions:
  • Make sure you have a food processor! We only had a mini Ninja blender and did not get the consistency right because we ended up having to add (and then strain out) so much water! If this happens to you too, just leave it in the oven longer to get crispy.
  • 1 head of cauliflower will make the same size as ours. So, if you’re feeding more than 2 people, double or triple the recipe!
  • Clean as you go! Things got a little messy.
  • HAVE FUN with it! Make it multiple times and switch up your toppings. So many creative opportunities with pizza.

productive start.

Happy Hump Day!!!

I cherish my morning time SO much. Up to this 10am hour, I have done my laundry, completed some homework, had two relaxing cups of tea, bought concert tickets for my babe’s birthday, and completed a Trader Joe’s grocery run in my pajamas hehe. The first picture is the motto on my felt board today. The second picture is one that I discovered on Pinterest this morning. It is a very happy and very fall picture, so I wanted to share!
